My last post I showed you how I use cauliflower as a “rice” substitute in different dishes that require rice. And, yesterday was Monday so any good, Louisiana girl knows you make Red Beans on Mondays!
So that’s what I did.
I like to make my red beans in the slow cooker. It’s SO SIMPLE!! Just throw the ingredients in and turn that sucker on. You don’t even have to soak your red beans! Just make sure you give yourself plenty of time for the red beans to cook if you don’t presoak them.
Here we go:
- 1 pound of red beans
- 12 oz turkey sausage cut up into 1/2 inch thick slices
- 1 ham bone
- 4 cups of water
- 1 diced onion
- 1 diced green bell pepper
- 4 stalks of celery diced
- 2 tablespoons of minced garlic
- 1/2 teaspoon thyme
- 1/2 teaspoon basil
- 1 teaspoon Créole seasoning mix
STEP 1: Gather, Wash, and Prep ingredients
STEP 2: Put all ingredients into slow cooker
STEP 3: Turn slow cooker to high heat and let cook for 8 hours
STEP 4: When beans have 1 hour left, begin cooking Garlic and Oregano Cauliflower “Rice”
STEP 5: Layer beans on top of cauliflower “rice” and garnish with some green onions. If you like a little extra kick like I do then also top with your favorite hot sauce.
STEP 6: ENJOY!
VOILA! A delicious and healthy southern comfort food! I have to admit these red beans were SO GOOD!! The texture of the cauliflower “rice” wasn’t quite the same as “real” rice but it definitely added a texture to the red beans that made for a good substitution! And it made me feel all good inside knowing I made my Monday staple of Red Beans healthier for myself and my family.
It also helps with how simple these red beans are to make! Just takes a few minutes in the kitchen to prep and then the hard part is over! SET IT, AND FORGET IT!!
